I'm not sure if other states are self-assured enough to name dishes after themselves at the rate Texas is. I don't feel like I've ever heard of Michigan style corn or Oklahoma style corn, but maybe it exists? This Texas style corn has a bit of a kick to it and 3 oz. of cream cheese (you really didn't come here for healthy recipes). I can see why my Grandmother included it in her list of favorite recipes.
This side dish is seriously easy to make and your family will love it. It takes a bit of time to make though since you have to bake it, but the prep work before the baking takes about 3 minutes.
This recipe only calls for three ingredients. That's right just three. 1 can of white corn (which either doesn't exist anymore or my HEB refuses to carry, so we just go with whole kernel corn), 3 oz. of cream cheese, and 1 small can of diced green chilis. That's it.
Because this recipe pulls together so fast, I highly recommend preheating your oven to 325 before you even get your ingredients out of the pantry.
To make this side dish put all three ingredients in a sauce pan over low heat. Stir it frequently until the cream cheese starts to melt. You do not need it to melt, you just need it to be considering melting. Like it's really interested in beginning to melt, it's getting shiny, maybe a piece or two is coming off. This takes about 5 minutes or less when I've made this dish.
See, it's looking shiny. It's considering melting, you can see it's just on the verge of it. It's perfect. This dish is super forgiving, if you actually melt your cream cheese you're fine too. I'm fairly certain you cannot screw this dish up. You might be able to burn it if you really put your soul into it. But I think that would even take effort.
After you've gotten the cream cheese thinking about melting, take it off the heat and pour it into a small casserole pan. Whatever you have is fine.
Then you bake it at 325 degrees for 15 to 20 minutes. By then your cream cheese will have committed to melting. It might still come out of the oven chunky looking, but you'll be able to stir it and it'll turn into a creamy sauce.
That's it! A nice addition to any other Texan themed meal. Or to a meal that needs to be Texan-fied.
TEXAS STYLE CORN
SERVES: 4 | PREP TIME: 5 MINUTES | COOK TIME: 20 MINUTES
Ingredients
1 can white corn
3oz. package cream cheese
1 small can diced green chilis.
Instructions
Preheat oven to 325 degrees
Mix all three ingredients in a saucepan and stir over low heat until cream cheese starts to melt.
Pour the contents of the saucepan into a small casserole and bake for 15 to 20 minutes.
