Every Christmas my Grandmother would make her famous divinity recipe. My sister and I absolutely devoted it! Honestly, it's a super ugly dessert, but it is basically a giant pile of sugar and absolutely delicious.
I have no idea where my Grandmother learned this divinity recipe, but looking it up, it's said to have evolved from the famous Turkish delights by the Karo corn syrup company around 1925.
Anyways, these pieces of candy are super easy to make. I always use a hand mixer when I make them, though realistically it's probably way easier in a stand mixer.
All you do is combine the corn syrup, sugar and water in a microwave safe bowl and heat it for 15 minutes or until it gets to the hard boil stage (if you don't have a candy thermometer let me be the first to tell you how super useful they are!). I honestly don't even stir it in the bowl before heating it.
While it's heating, in a separate bowl (and pro-tip, make it a big bowl this candy gets dramatically bigger as it goes) add the egg whites and salt together. Start beating two egg-whites until there are stiff peaks. You can tell you have stiff peaks when you pull the mixer out of the froth and the froth forms a little peak that stands up. It'll take a few minutes to do that.
Once the microwave beeps and you've checked the temperature on the sugar mixture all you do is slowly (key word, slowly) pour the sugar mixture into your egg whites. Make sure and beat the mixture constantly as it pours in. This is where a stand mixer comes in handy, most of the times I've made this I had my husband pour and I used a hand mixer to mix, but that is definitely a two-person job. Once all the liquid is poured in keep mixing it until the mixture is no longer shiny. Generally that's a few minutes, like maybe four or five, but its an old wives tale (that is probably true!) that humidity and cloudy skies can affect how this candy forms.
Once the mixture is dull, add the vanilla and broken pecans.
Once it's all mixed and a dull white color all you have to do is take a spoon and plop it on something non-sticky. I used a silpat, my Grandmother used a piece of foil coated in pam, parchment paper would also probably work well, doesn't have to be fancy! Once you plop them all on the sheet, give it a few minutes to set and then it's ready to be served.
When you're not eating it (or devouring it in my sisters case) make sure and store it in an air-tight container otherwise it'll go very bad very fast.

DIVINITY
SERVES: 30 PIECES | PREP TIME: 5 MINUTES | COOK TIME: 20 MINUTES
½ cup light corn syrup 3 cups sugar 2/3 cup water ¼ tsp. salt
2 egg whites ¼ tsp. vanilla extract 1 cup pecans, broken
INSTRUCTIONS
1. In an 8-cup measure combine sugar, corn syrup and water. Microwave on high (750 watts) for 15 minutes until mixture reaches hard-boil stage (260 degrees F).
2. Add salt to egg whites in a large mixing bowl and beat on high speed with an electric mixer until stiff peaks form.
3. Slowly pour syrup in a thin stream into eggs whites, beating constantly until mixture loses its gloss and thickens, about 4 or 5 minutes. Stir in vanilla and nuts.
4. Drop at once by spoonful’s onto foil which has been sprayed with Pam.
