This dish both reminds me of summer and Christmas. I think that my Grandmother must have made this to serve for dinner at Christmas sometimes as the only reason I can make that make sense because it is the PERFECT summer dessert. She called it a salad. I'm not sure why, there is literally nothing in common with an actual salad.
By putting this "salad"in the freezer it makes it really nice to cool down on the dog days of summer. It also gives it a bit of a crunch which is unexpected and different.
This "salad" (I'm going to keep putting this in quotes because it just really isn't a salad, at all, and I just find it so hilarious and so 1970s that anybody would call this a salad) is super easy to make, all it takes is cutting up some bananas, chopping pecans (if you want them and if you didn't buy chopped) and cherries and you're basically done. The worst part of this is having enough time to let it freeze.
In a large bowl (you really will want a large bowl, it seems like small bowl worthy, but when you get to the last steps you'll get it) combine an undrained can of crushed pineapples, 5 bananas sliced thinly, 1/2 cup of chopped cherries, 1.5 cups chopped pecans (if you want, I skip sometimes because I don't like nuts).
To that add the 1.5 cups of sugar, 1/2 cup of lemon juice 1 pint (or 16oz) of sour cream and 14oz of cool whip. Stir it super well. This will not look particularly pretty. But it is not meant to be pretty, it is meant to be delicious, which is accomplishes.
Pour that in a pyrex bowl and put it in the freezer and let it freeze for a few hours and you're ready to go!
FROZEN FRUIT SALAD
SERVES: 10 | PREP TIME: 15 MINUTES | COOL TIME: 5 HOURS
Ingredients
1 small can crushed pineapples, undrained 5 bananas (sliced fine) 1 ½ cups sugar ½ cup lemon juice ½ cup cherries, chopped 1 ½ cups chopped pecans 1 pint sour cream 2 (7 oz.) containers cool whip
Instructions
Mix and freeze in 9x13 or 9x8 Pyrex pan.
